One of my favorite Moroccan salads is za’alook which is basically a spiced eggplant salad. It’s always been a favorite (and I don’t even like eggplant!) Normally salads in Morocco are cooked vegetables served at room temperature. They’re eaten by scooping up the salad with bread. I’m not against this but I decided to take things a step further with these eggplant bites.
The truth of this recipe is, it’s leftovers.
I am always looking for ways to take things that are in my fridge and make them into something else. My husband and kids really are not into eating leftovers unless I make them into something else. But, what do you do with a cooked eggplant salad?
You wrap them in a wonton wrapper and pop them into the air fryer to make a super easy appetizer or snack of course!
Air Fryer Eggplant Bites (Za'alook Briouats)
Use up any leftover za'alook when you whip up these eggplant bites in your air fryer.
Ingredients
- Leftover za'alook salad
- Wonton Wrappers
- Small bowl of water

To make these bites you simply need the wrappers and the salad!
Add 1/2 tsp of the za'alook salad to the middle of the wrapper.
Use your fingers to wet all of the sides of the wrapper. To close you can either fold in half or you can fold up to create the shape shown here. Simply pinch all the edges together.
Add to the basket of the air fryer and cook at 370F for 4 minutes.
Notes
This recipe doesn't really have a quantity it will make, it just depends on how much you want to make!
