It’s summer and that means in the gardens of the Midwest, where I grew up, there are hundreds of zucchini being harvested. I grew up eating this vegetable, primarily when it was made into bread. But, as an adult I’ve grown to love and appreciate it in all ways. One Moroccan salad that I’ve come across is a cooked zucchini salad with eggs. It sounded so strange when I first was told the recipe but I chalked that up to having never experienced it and went in with an open mind.
First, this recipe is super simple.
