Traditionally cooked in a tagine or cast iron pan, this omelette features a rich sauce made from tomatoes, onions, and a blend of aromatic spices. Lightly beaten eggs are then poured over the sauce and cooked until set, often garnished with fresh herbs and olives. Moroccan Berber Omelette

Ingredients

  • 2 to 3 tablespoons of olive oil
  • ½ onion, finely diced or grated
  • 1 teaspoon of crushed garlic
  • 3 large tomatoes, grated
  • ½ green pepper
  • 1 teaspoon of turmeric
  • 2 teaspoons of paprika
  • ½ teaspoon of salt
  • 1 ½ teaspoons of cumin
  • 3 eggs
  • 1 teaspoon of chopped Italian parsley
  • Salty black olives or any olive (optional)

Instructions

1. Preparation:

  • Get all your ingredients ready beforehand, as this recipe comes together quickly.

2. Cooking the base:

  • Add and heat olive oil in the bottom of a tagine. Add the finely diced or grated onions and crushed garlic. Personally, I prefer grating the onions to enhance their flavor and avoid their texture. 

3. Initial cooking:

  • Cook the onions and garlic on low heat for 1 to 2 minutes until they start to warm up.

4. Adding vegetables and spices:

  • Wash and dice the green pepper into equal-sized pieces. Add the spices, grated tomatoes, and diced green pepper to the tagine. Let it cook for 3 to 5 minutes to develop the flavors.

5. Adding the eggs:

  • Crack and whisk the eggs, then pour them into the tagine. Stir immediately to combine the sauce and eggs, but avoid stirring further to prevent scrambling.

6. Finishing touches:

  • Once the eggs start to cook, add the olives if you choose to use them. Cover the tagine to ensure the top of the eggs sets.

7. Serving:

  • Serve the omelette with bread and top with freshly chopped parsley. For a vegan protein option, my friend Nadia from Manira Palm suggests adding scrambled tofu.
