I didn’t do this last week, not sure why but it just didn’t come across my radar in time. And the week was an absolute mess. Seriously. I started a new job on Tuesday and had no plans in the works at all for meals the rest of the week. This has led me to believe that meal planning is a must, especially now that I’m at work a good portion of the day. My oldest has also started carrying his lunch almost everyday so I’ve added on lunch planning, though not as structured.
Monday: Lower Fat Lasagna
Tuesday: Beef and White Bean Tajine
Wednesday: (out of town for DH’s citizenship ceremony) Crockpot Chicken with Rice and Veggies
Thursday: Baked Gnocchi
Friday: Chicken with Saffron Rice
Saturday: Greek Slow Cooker Chicken
Lunches – often will be leftovers for me; some type of sandwich for the little guy. I’m also making some Kale chips and Sweet Potato chips to add in. I’m also checking some of these lunches for more ideas.

Congrats on DH's citizenship ceremony. It will be a huge weight off your shoulders & makes life, especially travelling, so much easier.
I've tried meal planning on several occasions but always have problems following it. Maybe it's easier if it's more than just two? Or do you have to be a really structured person?
I think you can make it work a few ways. 1) is to plan daily and stick to it (or pre-cook portions of the meal) or 2) make a list of 5-6 meals and then shop for them. Make which meal sounds good that day. I don't always follow exactly but it helps me to have ideas prepared ahead of time so I'm not wandering the kitchen figuring out what to make!
