Moroccan Fruit Salad

Let me preface this post by saying I’ve never eaten this in Morocco it is purely my own creation, and it was devised more out of fridge cleaning than anything else.  It’s a quick salad for a busy mom on Mother’s Day!  I found that this was a great combination of sweet and tart.  It’s healthy but it definetely tastes like a dessert.  I served it after our meal however, I think that it would be great as a pre-dinner salad.  I’ve also considered throwing some grilled cubed chicken breast and spinach in and making it a lunch salad.  You can mix this up with whatever you have on hand.  I’ll be sharing what I used (side note: I use all organic produce, for that matter I use organic or free range everything whenever possible.)

Ingredients
3 gala apples, peeled, cored and cubed
1 navel orange
1 handful of raisins (add more or less to your liking)
1/4 c pulp free orange juice
1 drop orange blossom water
1 tsp sugar

Directions
Peel and section the orange.  I remove the casing of the orange so that I just have the inner flesh.  Cut this into pieces.  Add the cubed apples and raisins.  In a seperate bowl mix the orange juice, sugar and orange blossom water into a dressing.  Note:  Do not use more than 1 drop of orange blossom water.  1 drop is really enough, otherwise it will be a very overwhelming taste.

**So sorry I didn’t add a picture – my camera refuses to cooperate with uploading but I’ll add it as soon as I can.!
