Moroccan Modern

Several years ago a grandma who knows I have  a cookbook addiction got Moroccan Modern as a gift.  It was one of my first cookbooks about Moroccan food and I’ve made nearly every recipe that is included.  This is not a new release book but if you really like Moroccan cuisine with a little twist this is a must have.  Author Hassan M’Souli owns Out of Africa a restaurant in Sydney Australia.  His style plays on traditional Moroccan flavors and dishes but also includes an infusion of new ideas and styles.  Looking at his most current restaurant menu showcases this.  Moroccan cuisine is a mix of flavors and cooking styles from Africa, Europe, and the Middle East and M’Souli adds pan-Asian flavors into his cooking as well.

What you will find inside is some very classic Moroccan dishes but also some dishes that simply hint at Moroccan origins.  I found the Seafood section the most interesting.  As someone who has just come to really appreciate and enjoy fish and seafood these recipes are new to me.  I’ve not spent a lot of time on the Moroccan coast so fish hadn’t entered my experience often when traveling.  The dessert section is also lovely including a few unique recipes I hadn’t encountered elsewhere.

This is a great cookbook and I’m sure you will love it!

  5. Moroccan cuisine is very rich and my favorite in the whole African continent as it boasts an array of flavors and cooking styles borrowed from Africa, Europe, and the Middle East as you so rightly say.
    I’m looking for an argan oil supplier in the US, do you know of any? Thanks!
