
This is most definitely not Moroccan food – pretty obvious right? Hold on for the recipe. I’ve been posting a little about freezer and crock pot cooking because there is a) a lot of interest in this and b) I’ve been doing a lot of this myself. When I say this I mean – it has changed my life. Seriously. Of course I still make things up on the fly but I also do a little more research for recipes that can be modified or partially cooked and frozen. Like many of you I have a busy schedule. I work an almost full-time job outside of the home, have kids that participate in activities and try to spend several hours a week here. We don’t eat out very often and MarocBaba abhors packaged meals. So, to get away from spending an hour or two in the kitchen every night I’ve started pre-cooking and freezing meals on the weekend. It usually takes me 2-3 hours and then I’m done. During the week I note meal ideas and create a shopping list as I go. I do one shopping trip and then go to town.
Pretty much everything can be frozen and that makes life a lot easier. But in case you’re wondering “gosh what can I freeze?” Here’s a good list from Simple Organized Living. A google search is going to find freezer meals, crock pot meals, bulk cooking, etc. However here are some of my favorite recipes I’ve come across recently.
Have a favorite soup? Mix everything together and freeze – add your pasta (if needed) when warming up. Take it a step further and freeze the soup in a muffin tin. Pop out the cups of soup when frozen and store in a freezer bag. Grab 1-2 frozen cups for lunch!
Love homemade bread? One of my favorite things to do is make a big batch of bread and freeze a portion of it once cooked. Just re-heat in your oven when desired.
Kids can’t get enough chicken nuggets? In a bowl beat together 1-2 eggs. In another bowl add flour and in a final bowl breading (bread crumbs, panko, cornflakes, bran flakes etc) Cut up chicken breasts and coat first in flour, then egg, and finally breading. Place onto a cookie sheet. When cookie sheet is full place in freezer for 1-2 hours. Remove chicken nuggets and place in a freezer bag. When ready to use cook on 350F for 15-20 minutes or until chicken is cooked through.

Onto this recipe. If you’re not from the Midwest (or Minnesota/Wisconsin for that matter) chances are you have no clue what a hot dish is. It’s a casserole. The ingredients are simple and it’s meant to be a one dish meal. There’s usually some kind of starch (potatoes), a meat (ground beef), a vegetable (peas or beans) and canned, creamed soup. It’s cheap and it’s pretty good. I held out making this for a really longtime and it’s only been recently that MarocBaba’s palate has grown accepting of Midwestern fare, though I tend to make it with a bit of a flair. My kids loved this, and he did too.
Ingredients
- Potatoes (1 bag of tator tots or 2 bags of hashbrowns)
- 1/2 lb ground beef
- 1 bag of green beans
- 1 can Cheddar Cheese Soup (I use Campbell's Healthy Request)
- 1 can of milk
- 4 oz grated cheddar cheese
- 2 cloves of garlic crushed
- 1/2 tsp salt and pepper
- 4 tbsp butter melted
- Cornflakes for the top
Instructions
- Brown the ground beef in a skillet and drain any excess oil.
- Using an 11 x 7 baking pan place a layer of potatoes at the bottom.
- Next add the browned ground beef followed by the beans. Sprinkle the cheddar cheese on top of the beans and add a final layer of potatoes.
- In a mixing bowl, add the soup, milk, garlic, salt and pepper and whisk. Drizzle over the top of the baking pan making sure to get the mixture over all parts of the pan.
- Finally crumble cornflakes on top and drizzle the butter on top of the cornflakes (this will make them extra crispy.
- You could cover and freeze at this point or if you're going to eat it right away place in an oven preheated to 350F. Bake until the top is brown and bubbly. In my oven it was 45 minutes to an hour. Serve hot.
